Topinambur (Helianthus tuberosus L.) — murakkab kimyoviy tarkibga ega bo‘lgan, oziq-ovqat va farmatsevtika sanoatida katta ahamiyatga ega o‘simliklardan biridir. Uning tugunaklari tarkibida inulin, fruktoza, vitaminlar, mineral moddalar va biologik faol birikmalar ko‘p uchraydi. Shu sababli topinamburni uzoq muddat saqlash va qayta ishlash texnologiyalarini takomillashtirish va sifatli qayta ishlash dolzarb masalalardan biri hisoblanadi. Shuningdek, quritish texnologiyasi mahsulotning oziqaviy qiymatini saqlab qolishda muhim ahamiyat kasb etadi. Maqolamizda konvektiv va infroqizil quritgichda mahsulot quritish jarayoni o’rganilda va yoritib berildi.
