Abstract
Zafaron (Crocus sativus) dunyodagi eng qadimiy va eng qimmatbaho ziravorlardan biri hisoblanadi. U o‘zining noyob lazzati, jozibador rangi va betakror hidi bilan qadimdan “ziravorlar sultoni” deb e’tirof etilgan. Ayniqsa, Sharqiy sivilizatsiyalar, jumladan, Fors, Hindiston, Arab va Markaziy Osiyo xalqlari madaniyatida zafaron alohida o‘rin tutadi. U nafaqat taomlar va ichimliklar tayyorlashda, balki xalq tabobati, kosmetika va parfumeriyada keng qo‘llanilgan.
