Abstract

Ushbu maqolada pomidor mevalarini quritishning zamonaviy va energiya tejamkor usullari, ularning an'anaviy usullardan afzalliklari hamda quritish jarayonining mahsulot tarkibidagi ozuqaviy moddalar (vitaminlar, antioksidantlar, likopin va minerallar) saqlanishiga ta’siri tahlil qilingan. Shuningdek, quritish texnologiyalarining mahsulot sifatini oshirish va eksportbopligini ta’minlashdagi roli yoritilgan.
